I'm not real sure what a pumpkin roll is but it sounds like it would be delicious. I love pumpkin pie! Oh my! Its one of my favorite desserts. I've had pumpkin bread before and it was really terrific too.

A pumpkin roll is one of the most scrumptious things ever invented tess! Basically it is a very thin pumpkin cake baked on a cookie sheet like a sheet cake and you lay it out on your counter floured with powdered sugar and make ya some homemade cream cheese frosting and spread on top. Then you very carefully roll it together from one end to the other in kind of like a rolling pin motion. Then you slice it so that you have pumkin roll swirls. I used to make them all the time. All from scratch. The are sooooooo delicious!

2. In a large bowl, beat eggs on high for 5 minutes. Gradually add sugar and pumpkin.. Add flour, cinnamon and baking soda. Spread the batter evenly in the pan.
Bake 375
15 minute or till springs back when touched. Immediately
turn it on to a linen towel sprinkled with powder sugar.
Peel off the paper, roll up cake using the towel. then cool it

To make the filling Mix powder sugar, vanilla, butter or margarine, cream together till smooth. I use mix master
Unroll the cake
Spread the filling from end to end
Refrigerate.
Can add more powder sugar if you like on top.
