ZuchinniWhat to do with all that zuchinni - this is a great one dish meal and freezes well. First I have to say that most of my recipes will not have measurements - I am italian, learned to cook from an italian mom who learned from an italian mom. So everything is kinda eyeballed. Most are by taste and you really can't mess them up. Anyway here goes- Brown some ground meat with a bit of garlic, onion in oil. Then add whole tomatoes (you can use canned or garden) I squish them in my hand before adding them to the pan. Cook for just a few minutes and then add your cubed zuchinni. Salt and Pepper to taste. Cover with a lid and simmer until the zuchinni is tender. It will make sort-of a tomatoe liquid and that is good. Right before serving add some grated parmesan cheese.

Oh yeah!Sounds great! I know what you mean about cooking. Grandma got off the boat from Poland when she was 12. Never measured anything. Learned to cook by taste since I was small. My aunt married an imported Italian (Mario-could you guess!). Learned some new flavors from her. Mario made his own Vino (Wine) from his grape vines over the patio. Put hair on your chest. Don't have that recipe-thank goodness! This looks like a recipe I'll be doing alot of. I may even try baking it with mozzarella. Thanks! |

Zucchini boatsI can't really take credit for this recipe, my husband makes these and it's a delicious way to use up zuchs. Take a nice size zucchini, split in half length wise. Scoop out seeds, then we fill with either cooked sausage and rice or hamburger & cooked rice,tomato or spaghetti sauce and cheese. Put in oven and bake til zucchini's are tender. Garlic sausage is really tasty in these boats. ![]() |
