Did you just bake them?- or did you add something special to make them glisten. I can bearly contain myself, when i see those pictures.

LORAx, I hope you did not eat that in all in one seating. No picture But I ate a simple chicken, tomato, adobe pepper soup base with a mexican twist. I had butternut squash, dinasaour kale onions, Gr. peppers and noodles floating in it. All the veg ,mostly , was from the garden..

Here was a meal of rice, onion, and chicken chunks, with my homegrown basil and chili peppers...

Nope, that's a week right there. I've been without camera (it will be back from the shop on the 10th, insha'alla) but I've been eating rather well.

Last night's dinner was beefy mac n cheese (wherein spiced ground beef is mixed with macaroni noodles and three cheeses, topped with gratinade, and baked. Super yummy, even if it is a starch sandwich).

Previous to that was creamy tuna risotto with tons of garden veg, and the old standby of baked chicken breast with new potatoes and tons of guacamole.

Whats for dinner?


Tonight I made a spoon salad. This is a salad that has veggies and fruit chopped very small and is eaten with a spoon. I made mine with apple, bok choy, brocolli, red bell pepper, and mixed baby greens. For the dressing put together olive oil, juice of one small lime, small spoon raw honey, and some water....blended it in my personal blender. That dressing came out so good and i made it up myself
I also baked an acorn squash and put it in a bowl after cooked and added real butter and mashed with electric hand mixer. Was a yummy and health dinner. and i have some salad left for tomorrow.

That sounds pretty good. I like you dressing recipe but I would have to leave out the red bell pepper and go with one with a little heat. Bell peppers and I just don't get along but hot one are friendly, lol.

Not sure about tonight, but for the mid-day meal I had home made chili topped with cheddar cheese and a dollop of sour cream.

What? I said you eat healthy...I never said that I did.
Oh, and 2 oatmeat raisin cookies (yes, home made) and a nice cup of herbal tea.

The 2 dogs stared at me the whole time and the old cat kept sniffing (she's blind) and waiting to hear me 'clink' the spoon on the almost empty bowl. That's her signal for food.

Dinner


Not quit sure about dinner tonight but something with chicken. For lunch I had a bowl of clam chower was very yummy. Yesterday though I bake 24 rolls and a batch of banana bread and believe it or not between last night and french toast for the boys and their dad all but a small piece of the banana bread is left. Holy cow boys eat a lot. So tonight it will be baked chicken and salad ohhh and of cant for get the potatoes for the boys. They are wrestling right now and eat like a horse. LOL
