Vegetarian Tomato Pie With Potato Crust

Ingredients:
  • about a ¼ cup of olive oil
  • 3 medium-sized raw potatoes - peeled and sliced thin
  • 1 small onion
  • 2-3 cloves of garlic - minced
  • 1 small bell pepper - diced fine
  • 3 small tomatoes - diced fine
  • 1 cup of spaghetti sauce - homemade if you have it, but ready-made works fine, too
  • 3 eggs - beaten
  • 1 cup shelled peas - fresh or frozen (if you use fresh, you may need to parboil them ahead)
  • 1 Tbsp fresh basil - chopped coarse
  • salt and pepper
  1. Preheat your oven to 375°
  2. Heat a couple of Tbsps of the olive oil in a large frypan.
  3. Add the potato slices, and cook them until they just start to turn light brown - stir them often so they don't burn.
  4. Remove the potato slices and use them to line the bottom and sides of a 10 inch pie pan - salt and pepper lightly.
  5. Using the same pan, add a couple of more Tbsps of olive oil and bring the pan back up to temp, then add the onion, bell pepper, and garlic. Saute lightly for just a few minutes, just until the onion is softened - keep stirring - then add the diced tomatoes and cook for another few minutes - next, stir in the spaghetti sauce and basil and remove the pan from the burner.
  6. Whisk the beaten eggs into the sauce, then stir in the peas.
  7. Pour this mixture into the pie pan that you have lined with the potato slices.
  8. Bake at 375° for about a half an hour, or until the filling has set and is lightly browned. Let the pie sit for about 10 minutes after you take it from the oven, before you cut it.

This can be served hot,
but, on hot summer evenings, hubby and I like to let it cool to room temperature.
I usually serve it with a tomato, basil, and Mozzarella salad.

I think I will try that this summer! My kids love trying new stuff, they may not allways like it but at least they try it.

This sounds really good and I'm thinking that when I make my homemade spaghetti sauce, I can make a roaster full of this and put it in the freezer (remember I feed an army each night!) I love dishes like this with fresh bread and salad! Thank you!

freezing


I'm not that good of a cook but potatoes usually do not freeze to well they tend to be mushy when you try to reheat? Maybe its just me? Ask ZuZu, can you freeze taters? I no you can tomatoes and cheese and lots of other things, but some things just don't work.

canned applesauce


I am a newbie with learning how to can things. We moved here a bit over 3 yrs ago and I have 1 apple tree 1 peach tree and 2 pear trees so I have bought canning books and jars and pot to process. I can make a pretty good applesauce. Maybe this could lead to a food swap? If it is canned it could be shipped? Anyone else do canning? We could do a trade.

You're most welcome, it's something we enjoy and it's my pleasure to share it.
You know, I've never tried freezing this - but I don't see why it wouldn't be worth a try.

Angie's right, it might affect the texture of the potatoes, but if you adjusted the cooking time and temperature,
(lower temp, longer time - I would think)
which you'd probably want to do anyway, since you're considering doing the larger volume, in the roasting pan.

I'd be interested to know how it works, please let me know, if you try it.

Getting the ingredients at the grocers today.
Won't be the same as fresh but I still need to cook so why not try it now! I'm all for simple!
