Stuffed peppersGround beef (or any kind of mix you like i.e. pork, beef, etc.) instant rice - not cooked salt, pepper chopped fresh parsley egg little bit of bread crumb any spices you might like Just mix everything together (again I can't give you measurements as I really cook from eye) Stuff pepper that have been seeded and arrange in a deep casserole dish. I use tomato sauce over them and then cover and bake at 350 degrees until meat is cooked. They freeze very well.

wow ymmy my hubby loves them,, but im not into double boiler,, you just cut and seed and stuff,, and go ? thats sounds like something easy that i could do,,, thanks for sharing that,, next sunday at fresh farmers market,, its stuffed peppers for us,,, blessings,, Beth |

I wrote this out for Alpha before I saw your post. Figured I'd just add my version. "AD-just cook some real (20 min)rice and cool it off. Then mix it by hand with raw burger and whatever spices you like (garlic, salt, maybe a lil basil). Cut the tops off the peppers and clean out seeds then put in a greased baking dish, stuff (not too tightly-it will expand) and cover or use foil to cover. Cook on 325 until it looks almost done-maybe an hour or 1 1/2 hours. The peppers will look dark and soft. The last 10-15 mins put spaghetti sauce (tomato paste reconstituted with basil and touch of garlic) over the top. I usually use the best hamburger I can afford cause the grease gets trapped in the pepper. Grandma didn't mind grease and even used half pork burger in hers. (She lived to be 86-not sure about all this cholesterol will kill you stuff, even though as a nurse I understand the physiology of it). Its easy cooking and good eating." |

| I make mine a lot like that, but if I don't have rice, I just use crackers, or bread crumbs, or whatever I have. And I always put onion in. Yum...makes me hungry just thinking bout it!

| When I make stuffed bell peppers ( which we are having once a week now with all the peppers coming in) I fry my hamburger down, drain any fat off and put the meat aside. I boil my bell peppers after taking the centers out. I boil them til they change color, dull green if using green ones. Then I fix a box of Rice-a-Roni Beef Flavor in a large skillet. When that is done ( per instrutions) I add my ground beef. Drain my bell peppers and then fill each one. After filling I then put in the microwave for another 10 minutes just to heat them through. This makes 4 large bell peppers with a little of the filling left over. Ive been making medium size ones and putting them in the freezer for later when Im at work and hubby needs something easy to fix.They are easy and very good. |

| I do a version with curried lamb some onion and a bit of pineapple covered with a curry sauce. I have been known to use a thai coconut curry. I don't think my Thai step mother would approve of this misuse of her curry recipe but what the h*ll. I have a stuffef octopus soup that is a combination of Hawaiian, Thai, Greek and chinese that I call aquarium soup. I haven't made it for awhile. It freaked my son out when I served it in a glass bowl. |

| I use the small octopus as sausage skins to stuff a pork and shrimp mint and cilantro mixture in. You put the legs back on and pin them up with a tooth pick. The octopus will shrink up when cooked and The legs curl up and out. They are so cute as they float around. I add some chinese cabbage for sea weed and Rice for sand on thew bottom of the glass bowl. |
