Shigumchi Namul - Korean Scalded Spinach


* 2 10-ounce bags spinach (or fresh spinach if you have some! )
* 1 tablespoon toasted sesame oil
* 2 cloves garlic
* 1 each scallion
* 1 teaspoon toasted sesame seeds
* 1/4 teaspoon salt

Bring a large pot of water to a boil. Add spinach and cook, stirring, just until it turns bright green, about 30 seconds. Drain and rinse immediately with cold water. Squeeze out excess water.

Heat oil in a large skillet over medium heat. Add garlic and cook, stirring, until fragrant, 30 seconds to 1 minute. Remove from the heat, add the spinach, scallion, sesame seeds and salt; stir to combine. Let stand for about 10 minutes to allow the flavors to seep into the spinach. Serve warm or cold, sprinkled with additional toasted sesame seeds.


i used to eat this ALLLLLLLLLLLLL the time when i lived in korea. i make it here at home, too! this is my favorite side dish. i would sneak off in the middle of the night & eat a whole bowl of it. i loved this stuff. it tastes like spinach with an added nutty flavor. very delicious, in my opinion! and it takes about 5 minutes to make it. can't get easier than that!!! the long part about this dish is cooling it. i like it best cold, but will eat it any way i can get it!!! i love it!
