pumpkin roll


Here is the recipe i use. If someone else has a different variation of pumpkin roll recipe they can add it here also. Hint hint bali! Lol!

1/2 cup flour
1 tsp. Baking powder
4 egg yolks
1/2 tsp. Vanilla
1/3 cup sugar
4 egg whites
1/2 cup sugar
Powdered sugar
1/2 cup pumpkin
2 tsp. Pumpkin pie spice

Grease and lightly flour a cookie sheet. Set aside. Stir together flour, baking soda, and pumpkin pue spice. Set aside.
In a bowl beat egg yolks with vanilla with a mixer on high speed for five minutes or till thick and lemon colored. Gradually add 1/3 cup sugar beating on high speed till sugar is dissolved. Mix in pumpkin.
Wash beaters. In another bowl beat egg whites on medium till soft peaks form. Gradually add 1/2 cup sugarbeating till stiff peaks form. Fold egg yolk mixture into beaten egg whites. Por in dry mixture over egg mixture, fold gently till combined. Spread batter evenly nto pan.
Bake at 375 for 12-15 minutes. Immediately loosen cake edges from pan and turn cake onto a towel covered in powdered sugar. Roll up towel and cake. Let cool to room temperature. Unroll cake, remove towel. Spread cake with cream chees frosting. Roll up cake.


Cream cheese frosting

Beat together two 3 ounce pkgs. of cream cheese that has been softened to room temperature, 1/2 cup butter or margerine softened, and 2 tsp vanilla till light and fluffy. Gradually add 2 cups of powdered sugar, beating well. Gradually beat in an additional 2 1/2- 2 3/4 of powdered sugar to reach spreading consistancy. After use store leftover frosting in the fridge in a covered container.

Oh, this sounds wonderful. Pumpkin pie is one of my favorites, so I will enjoy this and Cream Cheese Frosting

It is awesome rc! Try it, you will love it! Bali has a recipe she uses too. Its different than mine but i bet they are both scrumptious!
