TalkingPiña Colada Freeze (Dairy Free) - Recipe


We recently tried this recipe that I originally found at the Trader Joe's website.

It's a frosty, soft ice cream-like treat that's quick and easy, and you don't need an ice cream maker, just a food processor - it was a BIG hit on a hot summer evening!
Piña Colada Freeze (Dairy Free)

Ingredients:
1 (16-oz) bag FROZEN Pineapple Tidbits (Do NOT thaw the pineapple first, it must be frozen for this recipe)
1 cup of canned, light coconut milk
1/4 cup sugar (optional)

Instructions:
1. Combine the coconut milk and sugar, stir until the sugar starts to dissolve, (maybe 15 to 30 seconds).
2. Add that to the frozen pineapple tidbits in a food processor and process for about 2 minutes, or until the mixture is smooth.
3. Serve immediately, and enjoy.

This sounds exactly like the frozen treat pineapple whip that i get here in missouri during the summer!! I'm gonna try this recipe!! Thanks! !

Aww, thanks HBL, you're a sweetie, but since this entire sub-forum "Kitchen" is for sharing recipes and discussing cooking topics, it seems easier, at least for me, to find and/or re-find a specific recipe if it's posted in it's own thread with the recipe title right there in the heading - just a personal preference.

I'm making this recipe today for my dinner guests!


I'm going to cut up fresh pineapple this morning and freeze it, to get it ready.


I'll let you know how it turns out. Can't wait to try.

Also gotta give it a try, with a bit of rum.

Hopefully in a few years I'll have plenty of pineapple, just put another top in the ground today. That make 4 we now have planted. Will need to lookup, and see how long it takes them to produce fruit. Hope I can keep them all alive through winter.

Just wanted to let you know Zuzu, that your recipe was a smashing hit with my friends and I yesterday.


Everyone loved it. I added a little bit of rum to the recipe too. So frosty and yummy. I used my magic bullet to make them.
