Fermented foods


Does anyone here make home made fermented foods like kraut, other veggies, kombucha, cheeses, yogurt?

I make them all and more so i was wondering if anyone else did. I will share some of mine I make if anyone is interested.

Pardon my ignorance, RR. When you say Kraut. Is this sauerkraut.
I love it and would like to know how to make it.

I made Dill Pickle a few times in a large crock. I friends mother used to make them all the time. They are wonderful.

Yeah rc kraut is sauerkraut. I love kraut but the rest of my family doesn't so I don't make it.
Used to help make it when I was a kid though. We made pickles every year during the summer for a long time. From dill, bread and butter to sweets. Its been a long time since I've done it though.

More time was devoted to canning and freezing than pickles truthfully.

Please share your recipes river. I would love to compare/try yours

I make my own pickle relish.. Yep canned pickles are the best business.

I wont buy store relish..

Your doing a great job with canning Mary.. Yes show us stuff

I've just a few weeks ago started making my own yogurt. Would like to make Kefir as well, but have yet to lay out the $ for the starter grains. Occasionally make Kombucha, but haven't for a little bit.

Would love to know how to do kraut!!

Kraut is very easy to make!

You can do it lots of ways but i will share what i do with you.
First this is the list of what i put in mine.

cabbage..chopped to the desired size
carrots chopped or shredded
broccolii chopped
organic pink himilayan salt
bottled spring water

Chop up all the veggies in a large bowl....add enough salt that the veggies are all able to all get covered but not so much you cant stand it if you take a bite...in other words salt it to taste. I use about 3-4 tablespoons. Then you start crushing the veggies...i use my hands and just squash and smash the veggies, this bring out the juice in the veggies that helps make the brine. After smashing them really good you should see some liquid in your bowl...let this mixture set for about 3 hours then you can jar it up.

After it has sat for few hours mix and crunch it a little more..then stuff it into jars. I use fido jars because they offgas all by themselves and there is no need to burp them to releasxe the pressure from the gas build up with the fermentation process.

Once you have the jars stuffed to about 2 inches from the top fill them with bottled water so that the water just covered the veggies. The veggies need to stay under the water(brine) so that they will not mold during the fermetnation. To make sure the veggies stay submerged you need to weigh them down with any kind of object that is sanitary and heavy..some people use smaller jars or even a zip loc bag with water in it and set it on top of the veggies. if you use fido jars this is not nessisary as there is no air getting to the veggies at all since the jars do not have to be burped.

So now you close up the jars, write the date on them and stick them in a dark cupbaord for about 6 weeks or so..you will need to burp them about once a week so the gas build up wont explode them. After about 6 weeks open up and taste the kraut..if it is nice and sour great..if its not as sour as you like close it back up and wait another week...these can ferment for months and be just fine.

Once you have decided it is to your liking put it in the fridge to slow down the fermentation process and eat up as you wish

I love home made kraut warmed up over scrambled eggs
