christmas candy recipe


Ok You will have to bear with me here because this recipe has been passed down and I have no measurements for it. I will explain the best I can. Even though theres potatoes in it, you cant taste them.

Potato Candy

Ingredients.

vanilla
powdered sugar
canned milk
peanut butter
potatos

First peel and dice a large potato. Boil until soft. Remove from the pan and mash with your fork. Pour powdered sugar in a bowl. Add a tsp maybe?? of vanilla, add a couple tsp of mashed potato, and a small amount of canned milk. This has to be mixed by hand, I cant mix it any other way. Dive into the mixture with your hands and mix all ingredients well. If its runny, you need to add more powdered sugar, if too stiff add a little canned milk. You want it to be pretty stiff because your going to roll it out flat. Usually if the mix is no longer shiny, its at a good consistancy. Sprinkle powdered sugar on your counter. Put the ball of "dough" on the sugar. Roll it out flat making sure to put powdered sugar on the surface to keep it covered and on the roller and even sprinkle a small amout on the dough to keep things from sticking together. Kind of like rolling out biscuits but you want it thinner than that. Once you have it all rolled out pretty thin then you add a thin layer of peanut butter. Take an egg turner and start rolling it up into a long log. Sprinkle plenty of powdered sugar to keep it from sticking. Once you have it rolled into a log cut it into pieces. The end result is kind of pretty looking, with a layer of white and a layer of brown, kind of swirled together. Store the candy in an airtite bowl with wax paper between the layers.


I hope this made sense. When I was growing up each one of the kids had their own candy to make at christmas. This was mine to make every year. If you have any questions about something I didnt explain well enough, feel free to ask.

This is a very rich and calorie intensive candy!!!

Sorry I missed this. I have been cooking fudge for the last month, most of which I gave out as Christmas presents (& hubby is now more chubby). I will have to try this though I don't have any powdered sugar right now. Tomorrow!

When you say canned milk do you mean evaporated or just canned? Just have some evap on hand... And what's an egg turner- a spatula? Just want to get it right.

I have


this recipe but it doesn't call for any milk. And it calls for a bag of conf. sugar. The water from the potato will be plenty to take up the sugar. An it calls for 1 small potato, boiled. Let cool then mash it up while adding the sugar. I does call for the vanilla. I like adding some finely chopped pecans along with the p.butter, but thats my choice. This is a very rich an sweet candy. Doesn't take much to satisfy the sweet tooth.

Thanks Trudy. Ye,s you could use a whole smalle potato and no milk. I mash up; the potato and use a spoon of the potato and a small amount of milk until I get the right consistancy. Yes, evaporated milk and a spatula. Just call me a hillbilly yall.

Abuelita's Fudge


It occurs to me that if you did it on wax paper, you wouldn't need the egg turner. It sounds great & I look forward to trying it. Thanks, Deb.

Just to reciprocate, here's my fudge recipe. I call it Abuelita's Fudge. Its spicy, like the Aztecs liked it.

2 TBS butter
2/3 evaporated milk or half & half
1 2/3 cup sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp instant coffee powder
1 tsp chipotle pepper
1 1/2 cup semisweet chocolate chips
2 cup marshmallows
1/2 tsp vanilla
1/2 cup pecans (great with cinnamon candied pecans from Whole Foods)

Line a loaf pan with foil & set aside.

Mix the first 6 ingredients in a saute pan. Turn heat on med to med-high (5.5 on my dial that goes to 9) and stir frequently. Butter will melt, sugar will dissolve, lovely aroma develops. As soon as I see some boiling bubbles forming on the bottom of the pan while stirring, I turn the timer to 5 minutes. Now stir constantly. As soon as the timer goes off, take the pan off heat & add the remaining ingredients. Stir until the chocolate is melted & it looks good (maybe a minute). Pour it in the pan & let cool.
