Another use for all that zucchini...


Green Soup

3 medium zucchini – cut into chunks
lb of fresh green beans – snapped
5 stalks of celery – cut into chunks
1 bunch of parsley
Pinch or two of salt

Clean all produce, cut as directed and steam in double boiler about 10 minutes. (It took me 3 batches to get it all steamed.) If you have a steamer, use that instead to retain more nutrients.

Puree in blender. (It took me 3 batches here too.) Serve!

This soup is wonderful for relief from all sorts of gastric disturbances such as stomach pain, gas, and indigestion. It is both nourishing and easy to digest. But the important factor is that it tastes good and is very filling. You can alter amounts of each ingredient to suit your taste. More green beans add more sweetness.

Can be served hot or cold! (I like pepper on mine!)

RR...wowee...I probably need a new blender too...but you know how frugal I am...will probably just stick with this old harvest gold one!!
It the Green Soup is too thick for your liking, you can thin it down a bit with a little fat free chicken broth! That is what I did with the last of it and I like it even better that way, but Tom likes it the original way which is thicker.
Anyway, nice to see you around!!
