Spanish Rice
Ingedients:
4 cups of rice
3 fresh tomatoes (Roma are best) diced
1 onion diced
1/2 tsp salt
1/4 tsp cumin powder
3/4 c oil (any kind)
1/2 c tomato paste
1/4 tsp garlic powder
Step 1:
In large skillet put oil and rice. Cook to brown the rice.
Step 2:
Add the tomatoes, onion, cumin and tomato paste. Stir fry it for 3-5 minutes until the vegetables nice and soft.
Step 3:
Add water. Try to cover the rice and taste it as you go. Start adding salt to taste. Let the rice cook for about 20 minutes at low - medium fire. Keep checking rice is cooked.
